Tortang Talong

This is one of our favorite breakfast meals. Very easy and quick to prepare. 

Simply broil or cook Chinese eggplant on a stove flame and rotate until the skin is burnt. Then, remove the eggplant skin, fan out eggplant with a fork, and dip in scrambled eggs. Fry the eggplant similar to an omelet. Serve with rice and tomato with vinegar sauce.
